Chorizo tortillas (meat filling) are a Mexican dish. To make it, you can buy tortillas in the store, and you can cook chorizo yourself - it will not be difficult. But sometimes there is a desire to cook all the components of the dish personally, so that you can fully boast to the guests!

Tortillas are made from both corn flour and wheat flour. Most often, tortillas are cooked using corn flour. Tortillas can be served separately, hot, with cheese, or chorizo - minced meat can be added to them.

So, to prepare 5-6 servings (cakes) of tortilla, you must use the following products:

  1. corn flour - 360 g,
  2. margarine - 60 g,
  3. water - 140 ml.,
  4. salt - 5 g,
  5. Cheddar cheese - 50 g.

Melt margarine over low heat. The cornmeal must be mixed with salt and sieved through a sieve 2 times. Add prepared margarine and warm water to flour, knead the dough. Then shape the dough into balls the size of a chicken egg and let stand for 15 minutes. After that, roll the dough balls into a cake with a diameter of 20 cm.

Heat a frying pan over medium heat. Tortillas should be fried on both sides (2 minutes on one side and 3 minutes on the other) without oil.

Chorizo should be cooked in parallel with the cakes so that they do not have time to cool and harden too much. The tortillas can be reheated in a hot skillet for 40 seconds, until they become pliable.

In order to prepare chorizo, you will need:

  1. ground beef - 1200 g,
  2. sweet pepper (red) - 30 g,
  3. garlic - 10 g,
  4. vinegar 3% - 90 g,
  5. salt to taste.

Finely chop the red bell pepper and garlic or chop in a blender, mix with vinegar, add to the minced meat, and then salt the whole mass and mix thoroughly. Minced meat must be fried until tender. You can also divide the mass into parts and shape each in the form of sausages and fry them on the grill or on charcoal.

Fold the cakes in half so that one side goes slightly behind the other, then form a pocket out of them, which must be filled with ready-made minced meat or sausages, and so that the edges of the cake do not disperse, fasten them together with toothpicks.

Place prepared chorizo tortillas in a heat-resistant dish, sprinkle with grated cheese, cover with foil and bake for 30 minutes at 180 degrees Celsius.

You can serve this dish with fresh vegetables: lettuce and tomatoes.
