It is believed that the word "mayonnaise" is of French origin. According to legend, this sauce was invented by the chef of the Duke of Richelieu. Mayonnaise is one of the most popular sauces in the world today. Despite the wide assortment presented in stores, many housewives prefer to cook mayonnaise at home. Products for this need the simplest - eggs, vegetable oil, vinegar or lemon juice.
Homemade mayonnaise recipe
To make homemade mayonnaise, you will need the following ingredients:
- 3-4 yolks;
- ¼ h. L. salt (finely ground);
- 1 tsp. tarragon vinegar or lemon juice;
- 2 tsp dijon mustard;
- a pinch of white pepper;
- 600 ml of refined vegetable oil;
- 2 tbsp. l. boiled water.
Place the yolks in a bowl, season with salt and pepper, drizzle with tarragon vinegar or lemon juice, add mustard and whisk.
Then, while continuing to beat, start gradually pouring in the vegetable oil - first drop by drop, and when the sauce begins to thicken, the portions of the oil can be increased. Sprinkle vinegar or lemon juice over cooking mayonnaise from time to time.
At the very end, pour in boiled water, which will provide the sauce with uniformity during long-term storage.
Lemon Mayonnaise Recipe
This sauce is prepared with the addition of lemon juice, therefore it has a spicy taste. To make lemon mayonnaise, you need to take:
- 1 cup vegetable oil;
- 3 egg yolks;
- ½ tsp. salt;
- ½ lemon;
- ½ tsp. mustard powder.
Separate the whites from the yolks. Set aside the whites, and add mustard powder, salt and juice squeezed from half a lemon to the yolks. Stir all the ingredients and refrigerate for 5 minutes. Then begin to beat the cooled mixture with a mixer at the lowest speed, adding vegetable oil drop by drop. As soon as the yolks have lightened and the mass has slightly thickened, increase the speed of the mixer and pour in the vegetable oil in large portions. If the mayonnaise is too thick, add a little water to it without stopping whisking.
Garlic mayonnaise recipe
Garlic mayonnaise is suitable for meat, vegetables and seafood. To prepare it you will need:
- 2 egg yolks;
- 250 ml of vegetable oil;
- ½ tsp. mustard;
- ½ tsp. lemon juice;
- 1 tbsp. l. chopped garlic;
- ½ tsp. ground white pepper;
- salt.
Combine egg yolks with mustard. Then gradually pour in the vegetable oil, whisking everything with a blender until thickened. After that, add the peeled and chopped garlic cloves, pour in the freshly squeezed lemon juice and beat all the ingredients again until a homogeneous mass is formed. Chill the sauce in the refrigerator and serve.
This recipe can also be used to make olive mayonnaise by replacing the garlic cloves with olives. Cut 40 grams of olives into slices. Add them along with lemon juice to the prepared emulsion and beat with a blender until smooth.
