Mayonnaise can be safely called the most popular New Year's sauce. After all, many festive salads and hot dishes cannot do without it. What can we say about the legendary "Olivier", which is even difficult to imagine without mayonnaise. But store sauces, while they taste good, have one bad side effect. Namely, salads seasoned with them have a very short shelf life - no more than a day, and in some cases even less. The same cannot be said for homemade mayonnaise, which can be stored for up to 10 days! After all, it is done without eggs. And dishes with it are not only tasty, but also safe to use.

It is necessary

  • - Refined deodorized sunflower oil - 300 ml;
  • - Milk with a fat content of 2.5% - 150 ml;
  • - "Russian" mustard - 1 tbsp. l.;
  • - Lemon - 1 pc.;
  • - Salt - 1 tsp;
  • - Sugar - 1 pinch (optional);
  • - Submersible blender or mixer.

Instructions

Step 1

First you need to prepare lemon juice. Take a lemon and cut it in half. Squeeze the juice out of it. At the same time, we remove the bones and throw them away. For mayonnaise, we need 2-3 tablespoons of this juice.

Step 2

Pour the milk into a deep bowl or narrow glass for beating. Usually these glasses come with a blender for making milkshakes, for example. Add sunflower oil to the milk. An important clarification: milk and butter must be from the refrigerator. Therefore, if you keep a bottle of oil at room temperature, it is advisable to measure the required amount in about an hour and keep it in the cold.

Step 3

Dip a hand blender or mixer into a bowl and whisk until a thick, crisp white mass at maximum speed. Next, put the rest of the ingredients in the following order: a teaspoon of salt, a tablespoon of mustard and lemon juice. A pinch of sugar is allowed if desired, but this does not play a fundamental role.

Step 4

You can stir everything with a blender at minimum speed in just 8-10 seconds, or you can just use a spoon. That's it. Homemade mayonnaise is ready! Depending on which dish you use it in, you can add your favorite spices to it, for example, black pepper, garlic or chopped dill. Everything is up to your taste. This sauce can be used to dress salads and bake hot dishes based on it.
