Curd-fruit delicacy, cake "Lakomka" will serve as a decoration for your festive table. Light, delicate filling, lots of fruits and a thin sandy base make this dessert an unforgettable treat. Both adults and children will be delighted with such a cake.

- 1.5 cups wheat flour
- 1/3 cup sugar
- 150 g butter or margarine
- 1 egg
- salt (pinch)
- For filling:
- 300 gr. cottage cheese 20% fat
- 2 egg yolks
- 0.5 cups caster sugar
- 25 gr. vanilla sugar (1 sachet)
- 45 gr. fruit jelly (1 sachet)
- 100 ml water
- fruit for decoration
Instructions
Step 1
Dough preparation:
Stir the butter, sugar and eggs in a saucepan or bowl with a wooden spatula until smooth.
Step 2
Pour flour into the mass, add salt and knead the dough.
Step 3
Roll the finished dough into a bun, put in a bag or plastic wrap and place in the refrigerator for 30 minutes.
Step 4
Roll out the cooled dough to a thickness of 4-5 mm.
Step 5
Line a baking dish with baking paper.
Put the dough in a mold and make high sides. Chop the cake in several places with a fork.
Step 6
Cut a circle out of baking paper that fits the bottom of the mold. Put the circle on the dough, sprinkle a layer of dried peas or beans on top.

Bake the cake at 200 degrees until golden brown for 25-30 minutes.
Step 8
Cooking the filling:
Prepare jelly according to the recipe indicated on the bag, but in less water than required (instead of 200 ml - 100 ml).

Rub the cottage cheese through a sieve.

Separate the yolks from the proteins.

Grind the yolks with powdered sugar until a white foam, then add the grated cottage cheese and beat until smooth. Add vanillin. You should get a homogeneous, not liquid curd mass.
Step 12
Cool the finished shortbread cake.
Pour in peas, remove the paper circle.
Step 13
We do not take the cake out of the mold. Put the curd mass in the middle of the cake, carefully leveling it inside to the brim.

We put the cake with the filling in the oven at 180 degrees for 5 minutes.
Step 15
Cool the cake and put it on a dish.
Step 16
Top with chopped fresh or canned fruits (peaches, kiwi, grapes).

On the fruit, carefully pour the jelly prepared in advance and cooled to room temperature.

We put the cake in the refrigerator for 1, 5-2 hours. As the jelly hardens, the dessert can be served to the table. Enjoy your tea.
