The traditional Lakomka pie is made without apples. But the apple filling rich in vitamins can give a dish not only a unique taste and aroma, but also make it healthy. Remove the butter or margarine from the refrigerator so that it is at room temperature when you start kneading the dough.

The dishes must be clean and dry. Carefully separate the whites from the yolks so that not a drop of fat or yolk gets into the whites. The fat will prevent the whites from beating into a stable, thick foam. Whisk the whites until they are firm peaks, gradually adding in half the amount of sugar indicated in the recipe.

Then whisk the yolks in a separate bowl with the remaining sugar. Add butter and vanillin to the yolks, mix well. Gently add proteins to the resulting mass.
Step 4
Sift flour. Pour flour and baking powder into a bowl of butter. Knead a soft dough that should not stick to your hands at the end of the batch.

The fourth part of the resulting dough should be placed in the freezer while you prepare the two pie fillings.

Brush a 24 - 26 centimeter diameter baking pan with margarine and spread the dough evenly over the bottom, forming small rims.

Apples need to be washed, peeled, cored, and grated.

Grate the zest from half a lemon on a fine grater - it will be needed to flavor the curd filling.

Squeeze out lemon juice and mix it with grated apples, add one teaspoon of sugar.

Put the cottage cheese in a deep bowl. If it's too dry, add a tablespoon of milk. Heat the cottage cheese a little to make it easier to grind with the egg, sugar, starch, and lemon zest.

On top of the dough, you need to lay out a layer of curd filling, and on top of it - a layer of apple. Remove the frozen part of the dough from the freezer and, without allowing the dough to melt, grate it on a coarse grater over the apple filling, so that it covers it.
