Rinse the carcass thoroughly in cold running water, remove the bones and cut the fillets into pieces (total 400 g). River fish will be tasty and juicy if pre-marinated. Chinese Sweet and Sour Fish Sauce

Fry a couple of minced garlic cloves, an onion and a small piece (about 5 cm) of ginger root in vegetable oil. Pour 2 tablespoons of soy sauce, 125 ml sweet and sour apple, orange or multifruit juice, 25 ml table vinegar (6%) into the roast. Add 50g Natural Tomato Ketchup and 2 tablespoons of brown sugar.
