Making juicy cutlets is not difficult if you rely on a good combination of two ingredients - tender chicken meat and aromatic mushrooms. Of course, you need to know a few more nuances of cooking. Only in this case you will get juicy cutlets with a crispy crust and a unique creamy taste.
It is necessary
- For 10 pieces:
- - 700 g chicken fillet or 500 g minced chicken;
- - onion;
- - 300 g of champignons;
- - a bunch of dill;
- - ground sweet pepper;
- - ground black pepper;
- - turmeric;
- - crackers or flour for breading;
- - vegetable oil for frying.
Instructions
Step 1
Prepare chicken meat. If you decide to take a fillet for this dish, cut it into extremely small pieces so that the cutlets turn out to be juicier in the end. It is better not to use a meat grinder.
Step 2
Rinse the mushrooms and chop them finely. Peel the onions and cut them into small cubes.
Step 3
Heat vegetable oil in a skillet. Fry the onion on it until golden brown. Add mushrooms to the onion and fry for just a couple of minutes. Finally, salt the onion-mushroom mixture to your liking.
Step 4
Chop the dill. Add fried onions and mushrooms, dill, ground bell pepper, egg and turmeric to the meat. The latter may not be used, it all depends on your preferences. To make the cutlets even juicier, you can add a little butter to the minced meat. In this case, they will also acquire a creamy taste. Season with salt and pepper and stir well.
Step 5
Heat vegetable oil in a skillet. Do not overdo it, otherwise the cutlets will turn out to be fatty and lose their taste.
Step 6
Shape the patties into a round shape. It is more convenient to do this with wet hands. Dip the cutlets in bread crumbs. If they are not available, flour can be used.
Step 7
Fry the cutlets until golden brown on one side and then on the other. Place the finished cutlets on a paper napkin and then on a plate. A napkin is needed in order to remove excess fat from the cutlets. Serve with fresh vegetables or rice.
