A delicate and aromatic first course according to the recipe of Hungarian cooks is carrot puree soup.
It is necessary
- - 500g of carrots;
- - 3 tbsp. tablespoons of long grain rice;
- - 1 onion;
- - refined vegetable oil;
- - granulated sugar;
- - salt;
- - greens;
- - 1.5 liters of vegetable broth.
Instructions
Step 1
Peel the onions. Wash the carrots well and peel them too. Cut the onion into thin half rings. Carrots - in large circles.
Step 2
Put chopped carrots in boiling broth for five minutes.
Step 3
Heat vegetable oil in a skillet. Put prepared onion in hot oil. Then, using a slotted spoon, remove the carrots from the broth and add to the onions.
Step 4
Fry the carrots and onions. Season with salt and granulated sugar.
Step 5
Put the fried vegetables in a saucepan with broth. Bring the soup to a boil. Make the fire smaller. Cook for another fifteen minutes. Rinse the rice. Add rice to soup. Cook for another twenty-five minutes.
Step 6
Purée the soup with a blender. Boil again. Decorate with herbs.
