Step 1
Rinse the eggplants well under running water. Cut off the green stalk. You do not need to remove the peel.

Cut the washed and prepared eggplants into thin, almost transparent slices. Sprinkle with chopped sea salt. Place eggplant slices on paper towels. Cover with more paper towels and a flat plate. Put the load.

When the eggplant slices have juiced, dry them gently with paper towels. Combine flour, turmeric and a small amount of ground black pepper. Dip the eggplant in the flour mixture. Shake off the excess.

Heat vegetable oil in a skillet. Fry the eggplant slices until golden brown.
