In summer, you always want something tasty, but light and refreshing at the same time. One of these dishes is the Summer Pleasure salad. The unusual combination of strawberries with vegetables makes the taste of this salad unique.
It is necessary
- - cherry tomatoes (200 g);
- - arugula (50 g);
- - fresh cucumbers (2 pcs.);
- - sweet yellow pepper (1 pc.);
- - leeks (1 stalk);
- - fresh strawberries (15-20 berries);
- - feta cheese (50 g);
- - fresh mint (10 g);
- - olive oil (4 tablespoons);
- - lemon juice (2 tablespoons);
- - garlic (1 clove);
- - lemon zest (1 tbsp. spoon);
- - ground black pepper to taste;
- - salt to taste.
Instructions
Step 1
Wash the tomatoes under running water, then cut each fruit in half. Sort the arugula, wash, let it dry and tear it apart with your hands. Wash the bell peppers, cut in half, remove the pulp and stalk with seeds, then cut into small strips. Cut the cucumbers into slices. If the skin of the cucumbers is too tough, then it is better to remove it. Peel, wash and cut the leeks. Wash the strawberries, dry them, lightly blot the berries with a paper towel, and cut into small pieces. Crumble the cheese. Wash the mint, dry and chop finely.
Step 2
When all the ingredients for the summer salad are ready, you can start making the sauce. For this, olive oil must be mixed with lemon juice. Crush the garlic under a press and mix it with the lemon zest. Add chopped garlic to olive oil and lemon juice mixture. Add salt to taste and a couple of pinches of ground black pepper to the salad dressing, then mix everything thoroughly.
Step 3
Place all the ingredients for the salad in a deep bowl, pour over the prepared sauce and mix everything carefully. Summer Pleasure salad is ready to eat.
