Lemongrass pie is a delicate aromatic dessert, the preparation of which does not require special skills and a lot of time. Light acidity makes baked goods especially pleasant in the hot season.
There are several ways to make lemongrass pie from yeast or shortcrust pastry. Each recipe is good in its own way.
To make a yeast dough pie, you will need the following ingredients: 3 cups wheat flour, 200 g butter, 1 tbsp. l. yeast, 100 g of water, a pinch of salt.
For the filling: 1, 5 lemons, 1 glass of sugar.
The yeast is dissolved in warm water. The butter is melted over low heat and left to cool to room temperature. Water, oil and salt are mixed. Pre-sifted flour is added to the mixture and a sufficiently dense dough is kneaded. The finished dough is divided into 3 parts. Each part is wrapped with cling film and refrigerated for 20 minutes.
During this time, you can prepare the pie filling. The lemon is cut into small slices, peeled and passed through a meat grinder. The crushed lemon is thoroughly mixed with sugar. 1 tbsp. l. the fillings are left to decorate the cake.
One part of the dough is rolled out in a layer up to 0.5 cm thick. 1/2 of the fillings are spread on the surface of the dough and leveled with a spatula. Sprinkle a baking sheet with flour. The layer of dough is carefully transferred to a baking sheet. The same is done with the second part of the test. The third layer will turn out without filling. The cake is sent to an oven preheated to 180 ° C and baked for 20 minutes. The finished pie is coated with the remaining lemon filling.
During baking, the lemon filling will saturate the dessert. However, in the cut, the cake will be distinguished by the clear boundaries of each layer.
Shortcrust lemongrass cooks very quickly. The following ingredients are required: 500 g of wheat flour, 200 g of butter, 250 ml of kefir, 2 lemons, 300 g of sugar, 1 tsp. baking powder.
Frozen butter is rubbed on a coarse grater and mixed with a small amount of sifted flour until butter crumbs are formed. It is combined with kefir, flour and baking powder. Knead shortbread dough, which is divided into 2 parts and put in the refrigerator for 30 minutes.
Lemons are scalded with boiling water, passed through a meat grinder and mixed with sugar. You can pre-boil the lemons for 5 minutes in boiling water. In this case, the filling will turn out to be more uniform. The resulting mass is left alone for 10 minutes.
The baking sheet is moistened with water. Roll out half of the dough and transfer to a baking sheet. The filling is applied to the surface of the layer, spreading evenly. The second part of the dough is also rolled out and the filling is covered. Pinch the edges tightly. In several places, the cake is pierced with a fork.
If the lemon-sugar pie mixture is too thin, you can bake the first layer of filling in the oven for a few minutes. Then remove the baking sheet and finish forming the cake.
Dessert is baked in an oven preheated to 190 ° C. Cooking time - 40 minutes. The finished cake takes on a pleasant ruddy color. Dessert is served to the table, cut into small pieces. It is best to use a wet knife for slicing.
