It is necessary

  • - 1 eggplant;
  • - 1 onion;
  • - 3 cloves of garlic;
  • - 4 pods of sweet pepper;
  • - 400 g zucchini;
  • - 3 tomatoes;
  • - 5 tbsp. olive oil;
  • - 1 bay leaf;
  • - 1 sprig of rosemary;
  • - 12 pieces of lamb with bone.

Instructions

Step 1

Rinse all vegetables thoroughly. Eggplant, dry, cut into slices and salt. Peel the onion into slices, chop two cloves of garlic into slices, pepper in large slices, zucchini slices. Pour the tomatoes over boiling water for 30 seconds, remove the skin and rub through a strainer to remove the seeds.

Step 2

Fry eggplants and zucchini on a grill (frying pan), sprinkle with 2 tbsp. vegetable oil. Then saturate with a paper towel to absorb excess oil.

Step 3

Fry onions and garlic in a pan, add 1 tbsp. vegetable oil. Add bell peppers, zucchini to the onion and after three minutes the eggplant, tomatoes, bay leaf, mix and let it brew.

Step 4

Peel and chop the remaining garlic into small cubes, fry in vegetable oil with the addition of rosemary for a few minutes. Then remove the garlic and rosemary from the oil.

Step 5

Fry the lamb in flavored oil after the garlic and rosemary, season with salt and pepper to taste.

Step 6

Serve the lamb with vegetables, garnish with a sprig of rosemary.
