Georgian cuisine is distinguished by extraordinary spicy flavors, juicy meat and hot spices. This especially applies to the Georgian national dish, which is called "Lobio". Interestingly, this dish can be cooked with or without meat.

Ingredients:

  • Red beans - 800 g;
  • Beef - 700 g;
  • Walnuts - 200 g;
  • A bunch of fresh parsley and cilantro;
  • Garlic - 4-5 cloves;
  • Red pepper, salt;
  • Olive oil;
  • Ground coriander - 1 tsp;
  • Wine vinegar - 50 g;
  • Tomato paste - 3 tablespoons or fresh tomatoes - 600 g;
  • Onions - 1 pc.

Preparation:

  1. Pre-soaked beans must be boiled, and then slightly kneaded with a spoon. If you add cold water to the pot when boiling the beans, it will cook much faster.
  2. Stew the beef, cut into small square pieces, in a deep frying pan or cauldron, which have been coated with olive oil in advance. Simmer for 30-35 minutes.
  3. Add onions, cut into rings, to the beef and simmer until the meat is tender, gradually adding tomato paste with walnuts chopped in a blender. If you are using fresh tomatoes, they must first be peeled. To do this, dip them in hot water for a few seconds and then pour cold water over them. After such a contrast with water, the peel from the vegetables is removed quite easily.
  4. When the meat in the pan is almost ready, pour in the wine vinegar.
  5. Along with the beans, add finely chopped garlic to the pan. The dish should be stewed for another 10 minutes. Then add finely chopped parsley and cilantro.
  6. Cover everything with a lid and let the lobio brew for 5-10 minutes.

Recipes for this Georgian dish may contain other ingredients, for example: carrots, green beans. Lobio is usually served hot.
