"Lobio" in translation from Georgian means beans. This is a popular Caucasian dish. Traditionally, it is made from red, white or green beans with the addition of various ingredients and seasonings. In modern cooking, there are many recipes for this hearty dish, far from the classic Georgian lobio, but no less tasty and spicy.
Lobio recipe is not in Georgian
Unlike Georgian, this lobio is prepared very quickly thanks to the use of canned red beans. To make a dish according to this recipe, you will need the following products:
- 1 can of canned red beans;
- 1 large onion head;
- 1 clove of garlic;
- 2 tomatoes;
- 1-2 teaspoons of granulated sugar;
- 1-2 teaspoons of hops-suneli;
- parsley;
- vegetable oil.
Peel the onions and cut into half rings. Wash the tomatoes, dry and cut into slices. Peel and chop the garlic with a knife or pass through a press.
Pour vegetable oil into a frying pan and fry onions with tomatoes over high heat. Stir them constantly so as not to burn. When the onions are clear and the tomatoes are juicing, add the suneli hops and chopped garlic clove.
Canned red beans in any sauce are not suitable for making lobio according to this recipe; you need a product in its own juice.
Then pour a jar of canned beans along with the sauce into the pan, add granulated sugar. Mix all ingredients thoroughly and sprinkle with dried or fresh parsley. Turn off the heat, cover the pan with a lid and let the non-Georgian lobio brew for 10-15 minutes.
This dish can be an excellent side dish for meat or served chilled as a snack. It is also suitable for posts.
Lobio recipe in Sochi
To prepare a dish according to this recipe, you need to take:
- 500 grams of green beans;
- 50 grams of lard;
- 2-3 eggs;
- 1 ½ teaspoon tomato paste;
- 2 medium-sized onions;
- 2-3 cloves of garlic;
- ½ teaspoon of ground black pepper;
- parsley and dill;
- salt.
Wash green beans, dry and cut into pieces. Pour water into a saucepan, bring it to a boil and lower the prepared beans. Boil it for literally 2-3 minutes. Then remove from heat and drain water.
In Sochi-style lobio, pork lard can be replaced with butter or vegetable oil.
Peel the onions, chop finely and mix with tomato paste. Melt the pork lard in a frying pan and fry the onion and tomato in it. Then put the beans in the pan, season with salt and pepper, cover with beaten eggs and stir. Cook for 3 minutes.
Remove the pan from the heat and garnish the Sochi lobio with washed and finely chopped dill and parsley. If desired, you can also sprinkle the dish with grated cheese.
