"Ala-Too" is translated into Russian as "snow-capped mountains." This name is given to a mountain range in Kyrgyzstan, a literary magazine and a national dish. In fact, these are breaded patties stuffed with egg and green butter.

It is necessary

  • - 300 grams of young lamb;
  • - 300 grams of beef or veal;
  • - one large onion;
  • - three cloves of garlic;
  • - nine chicken eggs;
  • - 120 grams of butter;
  • - 2-3 sprigs of fresh parsley;
  • - half a teaspoon of ground paprika;
  • - bread crumbs (no additives);
  • - 2 tbsp. 10-15% cream;
  • - salt (to taste);
  • - black and / or allspice (to taste);
  • - sunflower oil for frying

Instructions

Step 1

Wash lamb and beef, remove films, veins, remnants of bones. Be sure to check if the lymph nodes have been removed from the lamb; if not done on the farm, carefully cut them out. Drain and cut into small pieces.

Step 2

Peel the onion, cut into several pieces.

Step 3

Pass the meat and onions through a meat grinder. Add the yolk from two eggs, paprika to the minced meat, salt and pepper, mix. Pass through a meat grinder again, cover with cling film and refrigerate for a couple of hours.

Step 4

Remove the butter from the refrigerator and place on the table.

Step 5

Wash six eggs and boil for five minutes. Cool, clean.

Step 6

Wash the greens thoroughly, remove the flabby leaves, dry. Peel the garlic. Chop as fine as possible with the garlic. Add softened butter and stir until the mixture turns a uniform green color.

Step 7

Cut the eggs in half in turn, remove the yolk (it can be used for cooking other dishes). Fill each half with green oil and line it back up.

Step 8

Remove the minced meat from the refrigerator, stir again. Take a certain part, sufficient for cooking one cutlet, mash. Place an egg in the middle and form a ball. The thickness of the minced meat around the egg should be about one centimeter. Make the rest of the cutlets in the same way.

Step 9

Prepare ice cream: mix the chicken egg with the cream and mix well, but do not beat.

Step 10

Dip each cutlet in ice cream, roll in breadcrumbs and place on a plate.

Step 11

Preheat a skillet with vegetable oil, place the patties and fry until tender over medium heat.

Step 12

Serve with any side dish, with vegetables or vegetable salads. Decorate with herbs.
