Fry freshly frozen vegetables in vegetable oil for 10 minutes. Boil the rice until half cooked in salted water. Drain and cool. There is another interesting recipe for rice casserole with chicken, mushrooms and the addition of broccoli. You will need: 300 g of broccoli, 2 cups of broth, chicken breast, 250 g of mushrooms, 1 tbsp. l. mayonnaise, 1 tsp. pepper and salt, 1 cup each rice, grated cheese and crumbled crackers, 2 tbsp. l. butter.

Wash the mushrooms thoroughly, peel them and cut them into small cubes. Pour the pre-cooked chicken stock over them and simmer for 15 minutes. Cut the chicken breast into small pieces and sauté over low heat for 20 minutes. Don't forget to salt and pepper the chicken to taste.

Rinse and boil the rice. Wash, peel and simmer broccoli over medium heat for about 25 minutes. Then preheat the oven to 180C and oil a deep baking dish. If you wish, you can prepare a more interesting version of this dish - a Mexican casserole. You will need: 2 cups of long grain rice, 400 g of chicken fillet, 300 g of cheese, 1 can of canned corn and red beans, 1 cup of tomato sauce, 2 tsp. oregano, salt and black pepper to taste, plus a bunch of fresh herbs.

Rinse the chicken thoroughly, put it in boiling water and salt. Place the saucepan over medium heat and let it boil again. From this moment, cook the fillets for 20-40 minutes (the cooking time depends on the chicken itself). Pour the rice into a deep bowl, cover with cool water and stir. Rinse it off by changing the water several times. Then cook the rice until cooked through for about 30 minutes over low heat. Remember to cover the pot with a lid.

Grate the cheese on a coarse grater, and rinse the herbs and chop finely with a sharp knife. You can use parsley, cilantro, dill, and green onions. Cut the cooked chicken fillet into small pieces and place in a large bowl. Add corn and beans to the chicken, followed by rice, pepper and oregano. Season with salt to taste. Pour the sauce over everything and sprinkle with grated cheese.

This casserole will be much tastier and more aromatic if you add a teaspoon of ground red pepper along with black pepper and oregano.

Preheat the oven to 190 ° C and grease the baking dish with vegetable oil. Gently line your chicken, rice and vegetable mixture into a baking dish and bake for 35 minutes.
