Tartlets are a versatile dish: with different fillings, tartlets can become an appetizer or dessert. The sweet cream and sourness inherent in oranges makes the taste of the tartlets bright. Serve tartlets with oranges as a dessert with tea or semi-sweet white wine.
Ingredients for the dough:
- Powdered sugar - 30 g;
- Butter - 150 g;
- Flour - 180 g;
- Starch - 40 g;
- Ice water - 1-2 tsp
Ingredients for the cream:
- Cream or milk - 200 g;
- Egg yolks - 2 pcs;
- Flour - 20 g;
- Sugar - 2 tablespoons;
- Vanilla essence - 2-3 tsp
Ingredients for decoration:
- Oranges - 5-6 pcs;
- Orange juice - 200 g;
- Gelatin - 12 g.
Preparation:
- Grind butter with powdered sugar, add flour and starch, add ice water. Next, quickly knead the dough. This can be done manually, but it is much more convenient using a food processor. Put the dough in the refrigerator for 1 hour.
- Prepare a sweet cream. Whisk milk or cream, flour, egg yolks and sugar in a saucepan over low heat. Cook until the mixture thickens. Cool, add vanilla essence.
- Preheat the oven to 200 degrees. Roll out the chilled dough and press it down with a thin layer to the surface of special tartlet tins. Pierce the base with a fork.
- Bake the tartlets for about 15-20 minutes, they should acquire a golden hue. Cool and remove the tartlets from the molds. Set aside to cool. At this time, prepare the decoration.
- To do this, soak the gelatin in water for 15 minutes. Peel the oranges and remove their pulp, cut it into small wedges. The resulting juice must be drained into a glass, it can be used in the future.
- Squeeze out the gelatin and melt it over low heat, after adding a few drops of water. Take orange juice, dilute it with water (about 100 ml) and add to the melted gelatin. Hold the mixture in the refrigerator until it thickens slightly.
- At this time, take the cooled tartlets, fill them with sweet cream, garnish with chopped orange slices. Pour the jelly on top so that it completely covers the oranges.
