It is necessary

  • - 400 ml of milk;
  • - 40 g of butter;
  • - 4 things. medium eggplant;
  • - 250 g of cheese;
  • - 6 pcs. chicken eggs;
  • - 1 tomato;
  • - 40 ml of vegetable oil;
  • - 50 g of premium flour;
  • - 5 g of black ground pepper;
  • - 5 g of nutmeg;
  • - salt to taste.

Instructions

Step 1

Take a skillet with high edges, heat well and melt the butter in it. Gradually add flour, stirring occasionally, hold for a couple of minutes and remove from heat.

Step 2

Boil milk and mix with flour. You can whisk the mixture with a whisk or blender. Put it back on the stove, season with salt, pepper and add nutmeg. Cook until the mixture thickens like sour cream.

Step 3

Wash the eggplants and cut into slices, cover with salt water for 20 minutes. Drain the water, dry the eggplant. Fry the eggplant on both sides.

Step 4

Pour the sauce into a baking sheet. Arrange the eggplants carefully. Wash the tomato, dry it and chop finely. Put the tomato on top of the eggplant. Beat the eggs and pour over the eggplant. Sprinkle everything on top with grated cheese on a coarse grater and put in the oven for 40 minutes.
