Eggplant casserole with cabbage and pepper is a very tasty dish that is very healthy due to the abundance of various vegetables. And most importantly, the casserole is easy to prepare, you just need to prepare all the ingredients, put them in a baking sheet and bake until tender.
It is necessary
- - 3 eggplants;
- - 6 tomatoes;
- - 3 bell peppers;
- - 2 onions;
- - half a cabbage;
- - 1 carrot;
- - 200 g of smoked cheese;
- - 150 g sour cream;
- - 2 eggs;
- - 2 tbsp. tablespoons of flour and tomato paste;
- - pepper, salt, herbs, vegetable oil.
Instructions
Step 1
Cut the pepper and cabbage into strips. Peel the onions, chop finely, rub the carrots on a coarse grater. Cut the eggplants into slices, salt, let them stand for half an hour. Then drain the juice that has come out from them, roll in flour, fry in oil.
Step 2
Fry onions with carrots, add chopped cabbage and peppers to them, salt. Simmer until the cabbage is soft and reduced in volume. Add tomato paste, simmer for another 5 minutes. Cut the tomatoes into slices.
Step 3
Prepare the sauce by mixing eggs, sour cream, 2 tbsp. tablespoons of flour. Salt, pepper, add your favorite spices at your discretion.
Step 4
Put a layer of eggplant on the bottom of a deep baking sheet, put the tomatoes on top. Then put half of the cabbage with pepper. Sprinkle with cheese. Pour half of the sauce over, add the eggplant layer again. Then repeat the layers. Sprinkle some more cheese on top.
Step 5
Bake for 40 minutes at 200 degrees. Sprinkle the prepared eggplant casserole with herbs, let it cool slightly. Cut into pieces and serve.
