A very simple recipe for a low-calorie and insanely tasty hard cheese at home. This cheese is perfect even for those who are on a strict diet or have a healthy diet.
Non-strict vegetarians will also appreciate it, because there is no rennet in it.
It is necessary
- - 600 g fat-free cottage cheese (not soft)
- - 500 ml skim milk
- - 1 egg
- - 1 tsp salt without a slide
- - 2 g of soda
- - pistachios optional (you can use any other nuts, seeds, seasonings or nothing at all)
Instructions
Step 1
Mix milk and cottage cheese with an immersion blender until smooth.
Step 2
Pour the mixture into a saucepan and put on a low heat, stirring occasionally. Wait until different fractions begin to separate: whey from the dense part. To speed up the process, you can add a couple of drops of lemon juice. When the whey has separated from the solid part, put it in a colander.
Step 3
While the mass flows down, beat the egg, add salt and soda there. Mix the beaten egg with cottage cheese and pistachios (nuts and spices).
Step 4
Put the resulting mass in a saucepan with a thick bottom or in a water bath. Over low heat, stirring constantly, wait until the mixture begins to curl up into one large lump. Then put the cheese in a container covered with baking paper, level it, cover it with paper on top as well and refrigerate until it cools completely.
The cheese is ready.
