Seafood is increasingly included in our diet, but it is mainly used as a snack. This classic Italian salad is a complete, tasty and satisfying main course. It will become a wonderful decoration even for a festive lunch or dinner.

- - 200 g squid;
- - 100 g of shrimp;
- - 1 small eggplant;
- - 1 red pepper;
- - 5 cherry tomatoes;
- - 1 shallots;
- - 1 lemon;
- - 50 g of parsley;
- - salt and pepper.
Instructions
Step 1
After peeling the potatoes, set them to simmer in lightly salted water. At this time, cut the peeled eggplant into 1/2-inch slices, place them on a baking sheet, greased with a little oil and salt mixture. Bake the slices in the oven for about 20 minutes.
Step 2
Fry the peeled and finely chopped onion in oil. Add the bell pepper, also diced, and then the small pieces of cherry tomato. Simmer over medium heat for about 15 minutes, then combine with chopped parsley and adjust the taste of the sauce with salt and pepper.
Step 3
Place the thawed squid and shrimp in a saucepan with cold water and the juice of half a fresh lemon. Bring to a boil, season with salt, cook for 5 minutes and strain immediately after cooking. Keep warm.
Step 4
Make a vegetable puree with boiled potatoes and baked eggplant. Mix it with the juice of half the remaining lemon. Pour the cooked tomato and vegetable sauce into a shallow dish. Place the vegetable puree in the center. Top with boiled squid and shrimp. Garnish with parsley.
