Spicy meatloaf stuffed with spinach, almonds and raisins is a delicious, satisfying and very beautiful dish that will suit any festive table. This roll stands out for its unforgettable aroma of rosemary, spinach and garlic. But the greenery doesn't end there. It is recommended to serve this dish with "Parsley Butter", the recipe for which, of course, is attached.

It is necessary

  • • 1 kg of pork (one piece);
  • • 2 cloves of garlic;
  • • 1 tsp. salt;
  • • 7 tbsp. l. sunflower oil;
  • • 1 tbsp. l. lemon juice;
  • • 0.4 kg. spinach;
  • • 0.1 kg. raisins;
  • • 2 tbsp. l. ground almonds;
  • • 3 sprigs of rosemary;
  • • 1 bunch of parsley.

Instructions

Step 1

Wash the pork, dry it and cut it to form a long and flat piece of meat.

Step 2

In a bowl, mix oil, salt and chopped garlic. Thoroughly coat with this marinade (from all possible sides) a piece of cut meat and leave it for half an hour so that it is thoroughly soaked.

Step 3

Pour the oil into a skillet and heat. Then put the spinach in hot oil, cover it with a lid and keep it on low heat until it wilts.

Step 4

Drain spinach in a colander and leave to stand for 5-10 minutes. At the same time, it is not necessary to grind it, during this time it should only get rid of excess liquid.

Step 5

Pour the raisins into a plate, add hot water and leave to stand for 3-5 minutes. Then drain the water, and finely chop the swollen raisins with a knife.

Step 6

Put chopped raisins, almonds, spinach and salt in a deep plate, mix until smooth and apply evenly on a piece of soaked meat.

Step 7

Roll up the roll with your hands, wrap it with either a thick thread or silicone ties. In this case, under each thread (tie) you need to stick a small sprig of rosemary.

Place the formed meatloaf with spinach and raisins in a baking dish, be sure to cover it with a lid, and send it to the oven preheated to 180 degrees for 45 minutes.

While the roll is baked, you need to make "Petrushkino butter". To do this, wash the parsley, chop finely with a knife, put in a bowl, pour lemon juice and 4 tbsp. l. oil, mix and refrigerate.
