Step 1
To make the pancakes more fluffy, slightly heat the kefir before cooking. Sift both flours into a large bowl.
Step 2
Pour 2 tsp into slightly warmed kefir. soda and stir. Then, stirring thoroughly so that no lumps form, pour in parts the sifted mixture of two types of flour. Then add sugar, a teaspoon of salt, vanilla and eggs. Stir until smooth, but do it quickly: otherwise the pancakes will come out "rubbery" in consistency. The resulting dough will be thick enough. We set him aside "to rest" for a quarter of an hour.
Step 3
Heat the frying pan and brush with a little olive oil (or any other refined oil). Spread out the dough with a tablespoon. When baking on one side, cover the pan with a lid. Then turn the pancakes over to the other side and bring to readiness without the lid.
