A fluffy soft pie with a vegetable filling can be served both warm and from the refrigerator. Moreover, even those who cannot stand the "blue" ones will gladly eat a piece, or even two!
It is necessary
- For a 22 cm shape:
- Dough:
- - 300 g flour;
- - 1 tsp baking powder "with a slide";
- - 150 g butter;
- - 150 g 20% sour cream;
- - 3/4 tsp salt;
- - a small yolk.
- Filling:
- - 150 g feta cheese;
- - 150 g of hard cheese;
- - 190 g of cottage cheese;
- - 2 small eggplants;
- - 1 small potato tuber;
- - 2 small eggs;
- - 55 g flour;
- - black pepper and parsley to taste.
- - 1 egg and 1 tablespoon vegetable oil for greasing baked goods.
- - sesame seeds for sprinkling.
Instructions
Step 1
The butter must be softened to make the dough, so remove it from the fridge or freezer beforehand.
Step 2
Sift the flour, baking powder and salt mixture into a large bowl, add the yolk of one egg, sour cream and softened butter. Knead to a smooth, soft dough. When kneading, try not to add flour so that the product does not turn out to be heavy. Roll the dough into a ball, wrap in plastic wrap and refrigerate for 60 minutes.
Step 3
Prepare the filling in this hour. Set the oven to preheat to 200 degrees. Wash the eggplants and cut them in half. Sprinkle lightly with oil, place on a baking sheet lined with baking paper and place in the hot oven for half an hour. Cool and remove the skin from the vegetables and chop into a small cube. Place in a bowl.

Reduce the temperature in the oven to 180 degrees.
Step 5
Grate hard cheese on a medium grater. Crumble the cheese with a fork, mash the cottage cheese with a crush. Chop the greens finely. Wash the potato tuber, peel, boil and also mash in mashed potatoes. Mix all ingredients with eggplant and season with salt and pepper to taste.
Step 6
Remove the dough from the refrigerator and divide into 2 parts: 1/3 and 2/3. Place most of it in a greased dish and knead to form sides. Roll the smaller one between the two pieces of baking paper.
Step 7
Place the filling on top of the dough and smooth with a spatula. Cover the third dough and pinch the edges.
Step 8
Mix the egg with vegetable oil and brush on top of the cake. Puncture with a fork in several places, sprinkle with sesame seeds (this is optional) and send to the oven for about 50 minutes: the top of the pie should be golden brown! Remove the finished pie from the oven, let it cool slightly and cut into portions.
