Fragile on the outside and soft on the inside, the meringue, fruit and whipped cream are a wonderful dessert that makes a great treat. Apricots can be substituted with raspberries or other berries to taste. The finished roll can be eaten immediately or wrapped in parchment and frozen.

It is necessary

  • For eight servings:
  • - 4 squirrels;
  • - 1 cup of sugar;
  • 1/4 cup almonds
  • - 1 can of canned apricots;
  • - 2 passion fruit;
  • - 1 1/4 cups heavy cream;
  • - salt, powdered sugar.

Instructions

Step 1

Preheat the oven to 190 degrees in advance. Cover the form with a diameter of about 23X33 with parchment.

Step 2

Beat the whites with a mixer along with a pinch of salt to form a fluffy foam. Add sugar 1 tablespoon at a time while whisking. The mass should be glossy and dense.

Step 3

Put the whipped egg whites into the prepared dish, smooth the surface with a spatula. Sprinkle with chopped almonds, place in a preheated oven for 15-20 minutes. The cake should turn light golden, harden a little. Then turn the meringue cake over onto parchment sprinkled with powdered sugar, leave to cool.

Step 4

Whip heavy cream with a mixer, grease the cooled meringue with it. Arrange the canned apricot halves and the passionfruit pulp evenly (you can use other fruits as you like). Roll up, starting on the narrow side.

Step 5

Sprinkle the finished meringue roll with apricots with powdered sugar, cut into portions. If you prepared the roll in advance, then simply wrap it in parchment or foil and store it in this form in the freezer.
