Pour baking soda into a glass and fill it with hot water. Then pour this soda solution into a bowl with watermelon rinds and add another 5 glasses of water there, but only already cold. Leave the crusts in this state for 4 hours. After the time has passed, transfer them to a colander and rinse.

Bring the mixture to a boil, then reduce heat and cook for another 15 minutes. After the time has passed, remove the jam from the heat and do not touch it for 12 hours.

After 12 hours have passed, the jam must be put back on the fire and the remaining sugar added to it. Bring the resulting mass to a boil, reduce heat and cook for another half hour. Place in jars and close tightly. The watermelon rind jam is ready!
