It is necessary

  • - 600 g of chicken liver;
  • - 1 large onion;
  • - 1 large carrot;
  • - olive oil for frying (1 tablespoon);
  • - 1 liter of milk;
  • - 150 ml 10% cream;
  • - 1, 5 tbsp. cognac;
  • - 1, 5 tsp Herbs of Provence (or other additives to taste);
  • - sea salt and freshly ground black pepper.

Instructions

Step 1

Pre-soak the liver in milk overnight to make it softer.

Step 2

Peel the carrots and grate finely. Chop the onion into small cubes. Heat some olive oil in a frying pan (I use 1 tablespoon) and fry the vegetables, stirring constantly with a spatula. When the vegetables are almost ready, add spices to taste.

Step 3

Remove the liver from milk, rinse, remove films. Pass the raw liver through a meat grinder along with fried onions and carrots. Add cream and cognac to the mixture, season with salt and pepper to taste. To stir thoroughly.

Step 4

Place in a suitable dish (you can use a bowl to cook rice) and put in a double boiler. Cook for 60 to 70 minutes, then chill in the refrigerator.
