A very delicate and light dessert will delight households and guests. It must be served cold.

Step 1
Take candied fruits. Homemade candied fruits or candied fruits made from orange and lemon peels are best suited for this recipe. Making them fashionable is simple. Wash and peel the lemon and orange. In a small saucepan, dissolve the sugar and simmer the peel in it, then remove, cool and cut. You can roll a little in powdered sugar. Dry the candied fruit in the oven until completely dry.
Step 2
Take several fores for the soufflé, preferably metal ones. Lubricate the molds with oil and sprinkle with a little powder. Refrigerate for twenty minutes.
Step 3
Transfer the curd to a small bowl and mash with a fork until there are no lumps left. Curd should look like thick cream or sour cream. Separate the yolks from the eggs and beat in a blender, add a little vanilla sugar and then the curd. Whisk until smooth.
Step 4
Separately, in another blender bowl, beat the egg whites, adding a little salt. Whisk until they form a thick foam. Add sugar and stir again. Mix both masses and mix gently.
Step 5
Add the resulting dough to the molds. Do not fill the molds completely as the dough will work a little. Sprinkle a little sugar on top. Pour some water into a baking sheet and place the molds. Bake on medium heat for twenty minutes. Cool the finished soufflé and sprinkle with powdered sugar, you can add some candied fruits on top.
