Step 1

Measure out 1300 g of sugar and 300 ml of water, simmer for 10 minutes. after boiling. The quality of the syrup will determine how strong or vice versa soft your candied fruits will turn out. If the syrup is steep, the fruit pieces run the risk of becoming sugar quickly. Then that delicious springy core, so beloved by all of us in candied fruits, will not come out. Weak syrup - with more than the specified water content - will prevent the fruit from drying out properly, which will also negatively affect the candied fruit.

Step 2

Blanch the sliced fruit in boiling water. Peaches and apricots - 3 min., Apples, pears, quince - 5 min., Orange and lemon peels - 7 min. Then drain and pat dry. (The indicated amount of water and sugar is sufficient for 1 kg of blanched fruit or crusts).

Step 3

Dip the fruit pieces into the syrup, bring to a boil, and turn off. Repeat the operation three times with an interval of 12 hours. Strain the fruit each time, bring the syrup to a boil, put the fruit back and let the syrup boil again. For the fourth time, before returning the fruit, boil the syrup in half, and turn it off when the candied fruits become almost transparent. This transparency is the main criterion that you did everything right.

Step 4

Throw the fruit in a colander, leave for 5-6 hours so that the remaining syrup can completely drain. It can be used to prepare drinks. And candied fruits should be laid out in one layer on a large wooden board, covered with gauze and left to dry. Someone uses an oven to dry candied fruits - in fact, you can. But the best texture is obtained if they have been dried in a small draft for 3-4 days. Lift the candied fruits periodically, and then turn them over. This will make the process more even.

Step 5

Sprinkle the finished candied fruits with sugar or powdered sugar. If desired, you can add a little natural vanilla to them. It is better to store candied fruits in a glass jar with a tight-fitting lid, then they will retain their quality for a long time.
