The main thing in cooking candied fruits is to be patient. The sugaring process usually takes several days. At home, you can make candied fruits from oranges, lemons, figs, melons and watermelons, even zucchini and eggplants are suitable. Having tasted such sweets only once, it is already impossible to refuse them.

In order to cook candied carrots, you need a pound of carrots, a pound of sugar, 1, 5 glasses of water, juice of one lemon, powdered sugar. Peel the carrots, cut into cubes, put in a saucepan. Pour water over the carrots and put on fire. After boiling, cook for 10 minutes.

Take out the boiled carrots with a slotted spoon - leave the water on the fire. Pour cold water over the carrot sticks. Add sugar to a saucepan, stir until dissolved. Put the carrots in boiling syrup, boil for a quarter of an hour and turn off the heat.

Leave everything for 10 hours - during this time, the carrot pieces will soak well with sugar. After that, boil the whole mass again over the fire for a quarter of an hour and leave again for 10 hours.

Now the pieces are well sugared. Heat them up and add citric acid on the tip of a knife, boil the mass and turn off the heat. Remove the pieces of carrots from the syrup, spread them on a baking sheet, which must first be covered with parchment. Pour the syrup into a separate container - you can add it to baked goods, impregnation for biscuits, and glaze.

Dry the candied fruit in the oven at a low temperature, you can even open the door. Roll the finished pieces in powdered sugar. For storage, they can be placed in dry, clean jars and hermetically sealed with lids. Based on this recipe, you can make candied fruits from many types of vegetables or fruits.
