Braga came to us from time immemorial. It is not known for certain when exactly this intoxicating drink was discovered. But it is definitely a very long time ago. From time immemorial, people have been able to prepare an invigorating drink using yeast. It is not difficult to do this in our time, at home.
Braga is drunk as an independent drink; moonshine is made from it using special devices. There are several ways to make mash.

- 400 grams of round unwashed Krasnodar rice.

Step 1
Cooking mash is easy. Dissolve the yeast in warm water, stirring thoroughly. Then add granulated sugar to the same container. Stir again until the sugar is completely dissolved. Now put the resulting liquid in a warm place. Under the influence of heat, the fermentation process will begin.
You need to look after the wash from time to time - is it not foaming a lot, is it ready. When fermentation becomes very weak, the mash can be used to distill moonshine.
Step 2
Braga is also prepared using not dry, but live yeast. To do this, you need to take 1 liter of water for 1 kg of sugar and 100 grams of live yeast. Granulated sugar should be thoroughly dissolved in warm water, stirring constantly. The water temperature should be 20-30 degrees.
Then cut the yeast into small pieces, chop, mix evenly with a little granulated sugar. In this way you have prepared the leaven. When gas evolution begins, it is ready.
After that, mix the starter culture with the warm water in which you previously dissolved the sugar. On top of the container in which all this is contained, you need to cover and put in a warm place. Preparing mash should stand in this form for 10-12 days. After that, she will be ready.
Step 3
Braga comes in many varieties, including the one that looks like rosé champagne. You can drink such mash with pleasure. But she's very drunk. Try to cook.
Dissolve 1 kg of granulated sugar in 3 liters of warm water, then dissolve 25 grams of yeast in the same place. Pour 400 g of round Krasnodar rice with the resulting liquid. Rice does not need to be washed before this. Then infuse this starter for 9 days.
After the sourdough is infused, add red currant to it. It will take about 2-3 tablespoons of berries. After this, the mash should be infused for another 9 days. And only then the intoxicated drink can be bottled, drunk, and treated to guests.
