In August, it's time to start preparing compotes for the winter from apricots, apples, peaches and, of course, plums. You can cook compote from one type of fruit, or you can make a delicious and beautiful assortment. A handful of cherries or a couple of apples will give the plum compote a special flavor.

It is necessary

  • Plum compote:
  • - 3 kg of plums;
  • - for 1 liter of water 300-400 g of sugar.
  • Assorted compote:
  • - 1.5 kg plums;
  • - 1-2 apples;
  • - a glass of cherries;
  • - 800 g of sugar.

Instructions

Step 1

Plum compote

Make a sugar syrup for the plum compote. To do this, heat the water, pour sugar into it at the rate of 300 g per 1 liter of water. If your plums are sour, you can put more sugar. Boil the syrup.

Step 2

Wash the plums, remove the stalks. Place the plums in clean, sterilized jars. The taste of the compote will depend on the number of plums. You can fill the jars almost completely, or you can only fill one third. Pour the syrup over the plums and cover the jars with boiled tin lids.

Step 3

Put on sterilization. To do this, pre-heat the water in a large saucepan to about the temperature of the syrup in the jars. This is to prevent the glass from breaking. Dip the cans of compote into the saucepan. Turn the fire back on and heat the water to a boil, then time it. Roll up the lids after 30 minutes.

Step 4

Turn the jars over, cover with a blanket and leave to cool. The next day, store the finished compote with plums, preferably in a cool place.

Step 5

Compote-assorted

To make an assorted compote, you will need large red plums, a couple of sweet aromatic apples, such as "Jonathan", and any cherry. Prepare the jars in advance, for this, steam them. Boil the lids.

Step 6

Wash the fruit. Cut the plums in half. Cut the apples into slices, remove the center with the seeds. Fill the jars with fruit halfway. Heat water to a boil and pour into jars under the neck. Cover with lids. After 5 minutes, pour the water into a separate saucepan, add sugar and bring to a boil. Pour the syrup over the fruit and roll up the jars. Turn upside down and wrap up for better sterilization.
