Step 1
Prepare food. Rinse the pork under cold water, pat dry with paper towels. Wash and peel the garlic and carrots. Cut large cloves of garlic in two. Cut the carrots into strips of half a centimeter wide.
Step 2
Take pork and make punctures in it with a thin sharp knife. They should be deep and on all sides of the meat. Insert garlic cloves and carrot sticks into the punctures. Spread them evenly over the entire piece of meat. Pork stuffed in this way during cooking will absorb the aromas of garlic and carrot juices, giving it a bright taste.
Step 3
Rub the pork with salt. Then sprinkle with seasoning evenly. You can pre-mix them in a clean dry bowl for convenience. You can also spread mustard on the meat before spices. It will not give it its own taste, but only make it softer and juicier.
Step 4
Wrap the prepared meat in cling film and leave on the table for an hour and a half (it is not necessary to put it in the refrigerator). During this time, the pork is soaked in spices.
Step 5
Preheat oven to 220 degrees. Free the pork from the film. Put foil on a baking sheet, place meat on it and cover with foil on top. Bake the dish for at least two and a half hours. Cooking time can take up to 4 hours depending on the quality of the pork. When the meat is almost done, open the foil and let it cook without it for a delicious crust (about 20-30 minutes).
Step 6
Try making a sauce for meat for a variety of flavors. For example, take a glass of black currants, half a glass of dry red wine, half a teaspoon of cinnamon, three teaspoons of sugar. Purée the currants with a blender, transfer to a small saucepan, heat. Add wine, cinnamon and sugar. Evaporate alcohol for at least 10 minutes over medium heat, after bringing to a boil. You can add a little flour or starch to thicken the sauce.
