Turkey meat is considered a very healthy product, it is easily digestible, rich in enzymes, minerals and iron. And from different parts of the turkey, you can prepare many dishes for every taste.
Turkey drumstick soup
You will need:
- 1 turkey drumstick;
- 1 small onion;
- 2 carrots;
- 6 potatoes;
- 2 tomatoes;
- 1 sweet pepper;
- 2 stalks of celery;
- 2 tbsp. tablespoons of vegetable oil;
- 150 g green beans;
- 1 bunch of parsley;
- salt, pepper to taste.
Fry the turkey on both sides in a dry skillet. Then place the drumstick in a saucepan and cover with cold water. Simmer for an hour, skimming off the foam. Once the meat is done, transfer to a plate and refrigerate.
Finely chop the onions, carrots into strips, potatoes, tomatoes, peppers and celery into cubes.
Heat oil in a skillet, sauté onions and carrots over medium heat until soft. Then transfer to a saucepan with broth. Add the sliced potatoes and bring to a boil.
Then cut the beans into 3-4 cm pieces. Remove the meat from the bone, cut into portions. Transfer to a saucepan along with all the vegetables. Season with salt and pepper for flavor and simmer the soup over medium heat, about 10 minutes. Pour into bowls and sprinkle with finely chopped herbs.
Turkey rolls with dried apricots and apples
- 500 g turkey fillet;
- 1 apple;
- 40 g of dried apricots;
- 2 tbsp. tablespoons of olive oil;
- 3 cherry tomatoes;
- 70 g of hard cheese;
- salt, spices.
For the marinade:
- 1 tbsp. a spoonful of olive oil;
- 2 tbsp. tablespoons of vinegar;
- 1 teaspoon of mustard.
In a bowl, stir together all the marinade ingredients. Then beat the fillets, salt, add spices and put in the marinade for 15 minutes.
Peel the apples, core and cut into thin slices. Rinse dried apricots and soak in hot water for 5-10 minutes. Then chop it finely and mix with apples.
Put a mixture of apples and dried apricots in the middle of the fillet. Then wrap the roll, put the seam down.
Heat the skillet well with olive oil. Fry the rolls on both sides until golden brown. Place in a baking dish. Top with cherry tomatoes and grated cheese. Add some water and bake the rolls for 15 minutes.
Cut the finished products in portions and serve.
Lula kebab from minced turkey
- 450 g turkey fillet or minced meat;
- 1 onion;
- 1 tbsp. a spoonful of vegetable oil;
- 1 tbsp. a spoonful of flour;
- 1 egg white;
- 1 tbsp. a spoonful of sugar;
- spices, salt, pepper to taste.
For the sauce:
- 2 cloves of garlic;
- 1 teaspoon of lemon juice;
- 2 tbsp. tablespoons of mayonnaise;
- 1 tbsp. a spoonful of yogurt;
- salt pepper.
Grind the turkey fillet with the onion through a meat grinder. Season with salt and spices, add vegetable oil and flour. Stir the mass.
Whisk the egg white and sugar until a thick foam forms. Add carefully to the minced meat.
Moisten hands in cold water, form kebabs. For convenience, you can put the semi-finished product on wooden skewers.
To prepare the sauce, grate the garlic on a fine grater, add lemon juice and leave for 10 minutes. Add mayonnaise, yogurt, salt and pepper. Stir well. Fry the kebabs on the grill for 15 minutes until golden brown. Serve with the sauce.
