Light noodle soup is especially good when cooked in clear chicken broth. Cook the soup with pasta once, if you boil it again, the noodles will become overcooked and tasteless. If you are preparing a large pot of soup, then use the method of adding the noodles directly to the plate.

Instructions
Step 1
Cook the broth. Wash chicken breast with bone under the tap. Place in a saucepan and cover with cold water. Cover tightly and place over high heat. When the water comes to a boil, reduce the heat so that the boil is low.

Use a slotted spoon to remove the foam that appears. Cook the breast for about an hour. Season the broth with salt at the end of cooking.

Remove the breast from the broth. Separate the meat and chop finely.

If the broth is not clear enough, beat one raw protein. Put a saucepan of broth on the fire and pour the protein into it in a thin stream. Let it boil. Turn off the heat and strain the broth through a fine sieve into another saucepan.

Peel a few potatoes. Cut them into cubes and place them in the boiling broth.

Peel the onion and chop it. Grate washed and peeled carrots on a coarse grater or cut into thin circles. Lightly sauté the onions and carrots in a hot skillet in oil. Add the sautéed vegetables to the broth.

There are two ways to add pasta to soup. Choose the one that suits you best depending on the amount of soup you are making.

The first way. Boil water in a small saucepan. Pour noodles into it and boil for 2 minutes. Then drain the water through a colander. pasta in boiling water will preserve the transparency of the broth.

Second way. Put a saucepan of water on the fire. When the water boils, salt it, add a spoonful of vegetable oil and add the vermicelli. Boil the pasta until tender. Throw in a colander. Place in a container. Add the vermicelli immediately to the plate and pour over the hot prepared soup.
