Pea soup, porridge, jelly …. Many dishes can be prepared from this wonderful representative of legumes. Besides the fact that it contains many vitamins and trace elements, peas are a source of protein, which makes them indispensable during fasting or heavy physical exertion. And you can also make a pea from it - a universal dish that is used as a side dish for meat or separately.

It is necessary

    • dry peas - 2 cups;
    • water - 4 glasses;
    • onion - 1 head;
    • butter - 100g;
    • salt to taste

Instructions

Step 1

Prepare the peas. Rinse it off and soak it in cold water for 1.5-2 hours. If the peas are whole, very dry, the soaking time can be increased to 4 hours.

Step 2

Put the washed and swollen peas in a saucepan, pour enough cold water, put on fire. After boiling, remove the foam and simmer for 40-45 minutes. There is no need to salt the water.

Step 3

After the peas have boiled well, carefully drain the water into a separate bowl. Do not pour the broth yet, it will still come in handy. Now you need to knead the peas. This can be done with a regular crush or with a blender. In the second case, the puree will turn out to be more uniform, soft. This does not mean at all - it is better, it all depends on your taste.

Step 4

Add butter to the pot in which the peas were boiled, melt it. Finely chop the onion and fry in oil. When frying, do not turn the heat on too much. The onion should become transparent. Make sure it does not burn.

Step 5

Transfer the resulting pea puree to the fried onions, add a little of the broth drained earlier so that the puree becomes thick, but fluid. Now you can put salt or dry salty seasonings, broths to taste. Cover the saucepan with a lid and leave to simmer over very low heat. After 5-10 minutes, turn off the heat and let the pea brew a little more (while setting the table for dinner).

Step 6

Serve the prepared delicious peas in a beautiful plate, lightly pouring melted butter over it. Garnish with herbs, or better yet, make a green salad with olive oil. If you want to include peas in your menu as a lean dish, swap butter for vegetable oil. It will also turn out very tasty and nutritious.
