The Skazka biscuit roll cake was very popular and loved by many during the Soviet era. Try to cook it and remember the taste of childhood.
It is necessary
- For the test:
- - 150 g flour;
- - 150 g of sugar;
- - 5 pieces. eggs;
- - a pinch of salt;
- - 1 tsp baking powder;
- - 30 g of potato starch;
- For the cream:
- - 1 yolk;
- - 1 tsp vanillin;
- - 1 tbsp. a spoonful of water;
- - 3 tbsp. cocoa spoons;
- - 360 g butter;
- - 240 g of condensed milk;
- - 1 tbsp. a spoonful of vegetable oil;
- For impregnation:
- - 100 ml of water;
- - 2-3 tbsp. spoons of brandy;
- - 100 g of sugar;
Instructions
Step 1
Make a biscuit.
Beat 5 eggs and 1 white with sugar until fluffy, add a pinch of salt.
Then add the sifted flour, baking powder and starch. Pour the dough onto a parchment-lined baking sheet and flatten. Bake in an oven preheated to 200 ° C for 15-20 minutes.
Step 2
Prepare the cream.
Mix the yolk with water and beat well. Add condensed milk and vanillin.
Place the mixture in a water bath and boil the cream. Let cool.
Step 3
Whisk the softened butter until white and mix with the chilled cream. Stir well until smooth. Put the finished cream in the refrigerator and stir periodically so that it cools down evenly.
Step 4
Prepare sugar syrup by adding sugar to hot water and put on fire, stirring constantly, until it dissolves. Add cognac at the end.
Step 5
Flip the baked sponge cake, paper side up, onto a clean cotton towel. Roll it into a roll with paper and towel and leave to cool as it is. The biscuit should ideally lie down for at least 6 hours. If there is no time, then cool enough to room temperature.
Step 6
Unfold the roll and remove the paper. Saturate the biscuit well with the syrup. Apply half of the cream on top in an even layer and roll again.
Step 7
Transfer the roll to plastic wrap, wrap tightly and refrigerate for 2 hours.
Step 8
Mix cocoa powder with vegetable oil, add remaining buttercream. Remove the film from the chilled roll, brush with chocolate cream on top.
Decorate the top of the cake with cream curls and fresh berries.
