It is not recommended to store eggs longer than three weeks. It is not worth taking the risk, because you can easily get food poisoning and a bunch of problems because of it. There are simple methods available to all to determine the freshness of eggs.
Take and shake the egg. You don't have to wave it all over the kitchen, just shake it a couple of times. If there is a strong dangling of the contents, then we throw it out without regretting it. The egg is not the first freshness.
There is one more simple experience. Pour water at room temperature into any container, you can cool it. We carefully lower the test eggs there and observe what happens to them. Fresh eggs will fall to the very bottom. Those who lie a bit will settle down at an angle at the bottom. If the testicle has deteriorated completely and irrevocably, it will immediately pop up. This method is good when there are no cracks in the egg. It floats up due to the air cushion located at the blunt end of the egg. The longer it is stored, the larger this air chamber becomes.
You can check eggs on a special device called an ovoscope. Fresh ones will shine through well, and dark areas will be visible on spoiled ones.
The most obvious way to test an egg for freshness is to break it and examine it, smell it. Then immediately prepare some tasty dish from it and use it, because a broken egg cannot be stored.
