    • 1 tablespoon 70% acetic acid

    • 3 kg of tomatoes;
    • 0.5 kg of onions;
    • 0.5 kg of carrots;
    • 0.5 kg of bell pepper;
    • 0.5 kg of apples;
    • 1 cup of sugar;
    • 0.5 liters of sunflower oil;
    • 1, 5 tablespoons of salt;
    • 20 g garlic;
    • 1 tablespoon of ground red pepper.
    • Adjika from tomatoes with zucchini:
    • 1.5 kg of tomatoes;
    • 3 kg of zucchini;
    • 500 g carrots;
    • 500 g bell pepper;
    • 3 heads of garlic;
    • 2, 5 tablespoons of ground red pepper;
    • 0.5 cups of sugar;
    • 2, 5 tablespoons of salt;
    • 1 cup vegetable oil.

Instructions

Step 1

Prepare your vegetables. For the preparation of adjika according to all recipes, vegetables are prepared in the same way. Wash the tomatoes, cut out the place where the stalk is attached to the fruit. Peel and wash the carrots. Wash the apples, cut into 4 pieces and remove the core. Wash the bell pepper, cut into 4 parts, remove the seeds. Peel the garlic.

Prepare tomatoes, carrots, apples, garlic, hot peppers and mince all vegetables.

Add to vegetables 0.25 cups of salt, 1 cup granulated sugar, 1 cup vegetable oil, 1 tbsp. l. 70% acetic acid. Stir everything until smooth.

Spread adjika in prepared jars, roll up, turn upside down and wrap overnight.

Adjika from tomatoes with zucchini

Prepare tomatoes, carrots, bell peppers. Peel and cut the courgettes into pieces. Pass all vegetables through a meat grinder.

Step 10

Add 0.5 cups of sugar, 2.5 tablespoons of salt, 1 cup of vegetable oil to vegetables. Cook adjika over low heat for 40 minutes.

Step 11

Put in a bowl with adjika 2, 5 tablespoons of ground red pepper, 3 chopped heads of garlic and simmer for another 10 minutes.

Step 12

Spread adjika in sterilized jars and roll up. Serve adjika on the table with meat dishes, as a seasoning for first and second courses.
