If your milk is stagnant and sour in the refrigerator, do not despair, you can make hearty cottage cheese from it, which is very useful for the body, it contains a lot of calcium. And if the curd is sour, then prepare mouth-watering syrniki.

- To make curd from sour milk:
- - sour milk 2, 5 l;
- - 2 pots (one for 3 liters, the second slightly smaller);
- - a colander covered with gauze.
- To make curd cakes from sour cottage cheese:
- - sour cottage cheese 530 g;
- - chicken eggs 2 yolks;
- - granulated sugar 5, 5 tablespoons;
- - 170 g flour;
- - 0.5 tsp salt.
- - a little vanillin and vegetable oil.

Step 1
Cottage cheese in a water bath
Pour milk into a small saucepan. Pour a small amount of water into another large one. Then place a pot of milk in it. Put all this on a low heat, heat it up. When water boils between the walls of the pots, look: the milk should curl up, separate into cottage cheese flakes and whey. Make sure that the curdled milk does not boil, otherwise it may come out dry. When you see that the clear whey has separated, immediately take out the small saucepan and set it aside.
Step 2
Then put a small basin in it, put a colander covered with gauze into it, pour the contents from a small saucepan into it carefully. Put in a colander, all excess liquid should drain gently, and the curd should be dry. You got about 450 g of cottage cheese. Transfer the resulting cottage cheese to a separate plate, now it is ready to eat. You can add pieces of any fruit to it.
Step 3
Sour milk cottage cheese in a slow cooker
Pour the sour milk into a slow cooker. Set the "Heating" mode. Leave the milk like this for about 50 minutes. Next, select the curd and place it on cheesecloth in a colander. Then tie the ends of the gauze with a knot and hang for 2 hours, you get a tight ball of curd. Then carefully cut it into portions.
Step 4
Sour milk cottage cheese in the microwave
This is the fastest way. Take 2.5 liters of sour milk, pour it into a microwave-safe dish. Then set the mode for 20 minutes. Let the finished cottage cheese and whey cool slightly and separate with a colander.
Step 5
If you have stale cottage cheese and sour, then you can make everyone's favorite syrniki from it. Mash the curd well and place in a bowl. Add egg yolks, vanilla, granulated sugar and salt. Mix everything thoroughly and pour in 150 g of flour, bring the dough until smooth. Sprinkle the remaining flour on the table. Then take portions of the finished curd mass with a tablespoon and roll them in flour. Gently shape the cheesecake.
Step 6
Send the resulting syrniki to a preheated frying pan. Pre-grease the pan with oil. Fry everything over low heat, do not forget to turn over. Then place the mouth-watering and aromatic syrniki on a plate, before serving, pour them with fresh sour cream or your favorite aromatic jam.
