- -1 kg of cottage cheese,

- -100 grams of butter,
- -2 teaspoons of baking soda,
- -0.67 teaspoons of salt.
Instructions
Step 1
Cut off a 100 gram piece of butter and leave to soften at room temperature.
Step 2
Pour a liter of milk into a saucepan (the larger the pan, the better), put it on a low heat. When heating, we follow the milk (stir it), if it runs away, you will have to start all over again.
Step 3
Put 1 kg in boiled milk. cottage cheese, reduce heat to low and cook for five minutes. For homemade cheese, it is better to take 9% cottage cheese, but you can use homemade unleavened cheese - if desired.
Step 4
After separating the whey, discard the curd in a colander. We put two layers of wet gauze in a colander in advance. Then we tie the cheesecloth tightly and squeeze out the rest of the serum. We hang cheesecloth with cottage cheese over a bowl and start with the following ingredients.
Step 5
Put soft butter in a bowl, break the egg, add soda (no need to extinguish), salt and beat. If you want the cheese to turn out more yellow, replace the whole egg with two yolks.
Step 6
Mix cottage cheese without liquid with a beaten mass of butter and eggs. Add some chopped herbs and salt if desired. Stir until smooth.
We transfer the curd mass to a small saucepan.
Step 7
Pour water into a large saucepan and put it on fire, it will be a water bath. Bring the water to a boil and put a pan of cottage cheese in it. Cooking cheese in the bath for 10 minutes. After the cheese begins to melt and becomes viscous, we transfer it to a mold (oiled).
Step 8
We put a press on the cheese and put it in the refrigerator for three hours. We take the finished cheese out of the mold, cut into slices and serve.
