  • - large potatoes - 1 kg;
  • - onions - 1 small head;
  • - any smoked bacon (for example, bacon or brisket) - 100-150 g;
  • - salt;
  • - sunflower oil for frying;
  • - a deep, thick-walled pan with a lid.

Step 1

Peel the potatoes and rinse under running water. Then pat it dry with paper towels.

Step 2

In order for the dish to turn out delicious, special attention should be paid to the method of cutting the potatoes. If the tubers are very large, then divide them in half lengthwise, and then cut each half into two longitudinal parts. If the potatoes are medium in size, then you do not need to divide the half again.

Step 3

Now chop each resulting part into large bars at least 3 cm thick. Due to the fact that potatoes with onions lose their shape much faster, the bars should be thicker than the usual straw.

When the potatoes are chopped, take a deep, thick-walled skillet and place it on the stove. After it has warmed up well, pour sunflower oil into it and heat it. At the same time, there should be enough oil in the pan so that it then envelops each bar.

Step 5

As soon as the oil is hot, transfer the potatoes to the skillet and, stirring occasionally, fry until they turn yellowish. The temperature under the pan should be set to the maximum temperature from the start to the end of cooking.

Step 6

In the meantime, prepare the rest of the ingredients. Remove the husk from the onion and chop it into small cubes. Cut the smoked bacon into squares or strips - here it does not matter.

When the potatoes turn yellow (not having time to fry to the end), salt them and add the onion cubes. Stir all the time and cook until you smell the fried potatoes.

Step 8

After that, put the bacon and fry the potatoes until tender - the cubes should turn out to be soft on the inside and crispy on the outside. The degree of doneness can be checked with a fork: pierce a couple of bars with it - if gently, then the dish can be considered ready.

Step 9

Remove the pan from the stove, cover and leave for 10 minutes for the food to reach the end. After that, the fried potatoes with onions and lard can be divided into portions. As an appetizer, it is best to serve a salad of fresh cucumbers and tomatoes, as well as pickles.
