It is necessary

  • Dough:

Instructions

Step 1

First, let's prepare the leaven. To do this, slightly heat the water and dissolve the yeast in it. Add flour and knead a thick dough. We transfer to a bowl and leave in a warm place without drafts for 3 hours: the finished dough looks like a high dome. It should not be left for more than 5 hours: it will lose all the air, which gives the dough fluffiness.

Step 2

We mix the finished dough with the rest of the dough ingredients. We knead, trying to catch as much air as possible with the dough: stretch it and fold it in half, stretch it and fold it again … The finished dough will be soft, elastic, will not stick to the surface. Form a bun and place in a bowl lightly floured. Cover with a damp towel and leave for 45 minutes.

Step 3

Sprinkle flour on the work surface, spread the dough and knead again. Put it back in the bowl, cover with a towel and leave again for 45 minutes.

Step 4

Divide the dough into 4 parts and knead each and form a ball. Rest for 5 minutes. Then we transfer it to a baking sheet lined with parchment, make cuts at the top in the form of a mesh with a sharp knife or blade, cover with a towel and leave for the last proofing for an hour.

Step 5

We heat the oven to the maximum (mine is 250 degrees). We open the oven and quickly spray it with cold water to create steam (this is conveniently done with a spray bottle). We put the blanks there and bake for 5 minutes at an initial temperature and then another 45 minutes, lowering it to 200 degrees. Cool completely and only then cut.
