Real rye bread has a fairly dense, heavy texture. Unsurprisingly, wheat bread is preferred in most cases. However, there are original recipes for delicious black bread, which is easy to prepare using a homemade bread machine.
Black bread with raisins
To make black bread in a bread maker, you will need the following ingredients: 300 ml of water, 2 tbsp. l. vegetable oil, 2 tsp. dry baker's yeast, 2 tbsp. l. natural honey, 200 g of wheat flour, 300 g of wholemeal rye flour, 1 tsp. salt, 1/3 cup raisins.
The preparation of black bread in a bread maker is performed in the "Basic" mode. If there is a special mode for baking with whole grain flour, it is preferable to choose a medium ruddy crust.
Vegetable oil is placed in a baking bowl, warm boiled water is poured and yeast is added. The water temperature should not exceed 40 ° C. Otherwise, the yeast will die and the dough will not rise. Then add natural honey and sifted wheat flour to the water.
After that, coarse rye flour is laid, which does not need to be sieved. The bread maker is turned on and salt is added a few minutes after the start of kneading the dough. It is undesirable to lay salt along with other components, since it slows down the fermentation of the yeast, which affects the rise of the dough.
Still later, pre-soaked raisins are laid. The dough may look quite runny at first. However, if by the end of the batch it forms a ball that has moved away from the walls, everything is in order, it has acquired the desired consistency. A little flour must be added to the batter, and water to too tight.
During baking, you should not open the bread machine to avoid disturbing the thermal regime. The finished bread must be immediately removed from the device and left to dry on the table, as products made from rye flour quickly become damp.
Black bread in a bread maker with the addition of cocoa and coffee
For cooking, you will need the following ingredients: 2, 5 cups of wheat flour, a glass of rye flour, 2 tsp. dry baker's yeast, 2 tbsp. l. apple cider vinegar, 1.25 cups of water, 1.5 tbsp. l. dry cream, 1 tsp. salt, 1 tbsp. l. natural honey, 1 tsp. instant coffee, 1 tsp. cocoa powder, 2 tbsp. l. vegetable oil.
Sifted rye and wheat flour, salt, cream, honey, cocoa, coffee are placed in the bowl. Then a depression is made in the ingredients, into which dry yeast is placed and vegetable oil, warm water and apple cider vinegar are poured.
Bread is baked in the "Basic" mode with a medium brown crust. The finished black bread is taken out of the bread machine and allowed to cool. Natural honey in the recipe can be replaced with molasses or regular sugar.
