Baking real Borodino bread at home is worth a lot. So much torment, and in the end, most often - unbaked brick. The supra bms-150 bread machine makes this process easier, but, alas, not much. Black bread requires a special attitude and constant attention.

  • - vegetable oil 2 tablespoons
  • - apple cider vinegar (6-9%) 1 tbsp.
  • - water 230 ml
  • - rye flour 200 g
  • - wheat flour 100 g
  • - salt 1, 5 tsp
  • - sugar 2 tablespoons / sugar 0.5 tbsp. + honey 1, 5 tbsp.
  • - rye malt / dry kvass / liquid kvass wort 2, 5 tbsp.
  • - active dry yeast 1, 5 tsp
  • - coriander 1 tablespoon

Step 1

Real Borodino bread has its own unique taste and color due to rye malt.

Step 2

Preparation of malt / dry kvass

If you decide to use kvass wort in your recipe, then skip this step. We take 2, 5 tablespoons of dry malt / kvass, pour 130 ml of boiling water. Mix thoroughly.

Step 3

Preparing coriander

Pour the coriander with 100 ml of boiling water, cover with a lid and leave to cool. Then we separate the grains from the liquid. The liquid will go to knead the dough, and the grains will be sprinkled on top.

Step 4

Dough

After the water has cooled down, do the following:

- if dry malt / kvass was bred, pour it and water from coriander into the bucket of the bread machine;

- if we use liquid kvass wort in the recipe, then pour it into a bucket, water from coriander and the remaining 130 ml of warm water.

Then add vinegar, sugar (or sugar with honey), salt. Pour flour on top. We make a notch in the flour and add yeast.

We start the program "Dough".

Step 5

Proofing

After the second kneading, sprinkle the top of the future roll with steamed coriander. You can smooth it lightly with your fingers so that the grains do not crumble from the finished loaf.

We leave the dough for 3-5 hours. We focus on the rise of 3-4 cm from the initial level. If the dough rises too much, the lid of Borodino bread will fall off during baking. If the dough does not rise enough, then black bread will be dense and viscous, like plasticine.

Step 6

Bakery products

When the dough has risen enough, start the Baking program.

Borodino bread is baked 2-3 times longer than white bread, so we will run this program again, after a 10-minute break.

A 10-minute break is required for the oven to cool slightly, otherwise it will not allow the program to be restarted and will beep disgustingly.

Step 7

After the bread is baked, it is better to leave it on the heating for another hour, so the crust will harden more. Then shake the loaf out of the bucket and pull the blade out of it using a special hook.
