How to make bagel shortcrust pastry

To make shortbread dough, you need to take the following products:

- 250 g creamy margarine;

- 2 ½ cups flour;

- ¼ glass of cold boiled water;

- 1 tbsp. l. table vinegar (6%);

- a pinch of salt.

Sift flour through a sieve onto a wooden cutting board. Cut hard (from the refrigerator) creamy margarine into slices, mix with flour and chop with a large knife or a special cleaver.

Mix cold water with salt and vinegar in a glass and add a little to the flour, continuing to chop with a knife. Use liquid, wheat flour and margarine to make dough by hand kneading. Add flour if necessary to prevent the dough from sticking to the board. However, it should be borne in mind that from an excess of flour, the shortbread dough turns out to be too steep. Form a ball from the finished dough and place it in the refrigerator for 30-40 minutes.

Loose bagels can be made from shortcrust pastry with cottage cheese, for which you will need:

- 150 g wheat flour;

- 1 tbsp. l. granulated sugar;

- ¼ h. L. salt;

- 85 g unsalted butter;

- 85 g of cottage cheese;

- 2-3 tbsp. l. heavy cream.

Toss the wheat flour, sugar and salt thoroughly in a large bowl. Cut well-chilled butter and cottage cheese into pieces, about 5-6 millimeters in size, add to dry ingredients and chop all ingredients with 2 large knives. As a result, the mixture should resemble large crumbs in appearance.

Then top with cold heavy cream and continue chopping the dough with a knife or stirring with a fork until it starts to gather into large, damp lumps. Form a bun out of the prepared dough, wrap it tightly in plastic wrap and put in the refrigerator for 1 hour to 1 day.

Lemon Filled Bagels Recipe

While the cooked shortbread dough is cooling in the refrigerator, fill the bagels. It will require:

- 1 lemon;

- 1 cup granulated sugar;

- 1 cup shelled walnuts.

First of all, scald the lemon with boiling water 2-3 times and let the lemon stand for 1-2 minutes each time. Then in a bowl, grate the lemon zest on a fine grater and squeeze the lemon juice here (do not forget to remove the seeds first). Add chopped walnut kernels and granulated sugar. Mix everything well.

Divide the cooled dough into 4 parts, roll each into a round or rectangular layer and brush with melted butter. After that, cut the layers into wedges and put the prepared filling on the wide part, distributing it so that it is enough for all the bagels.

Then carefully start rolling the bagel from the wide side to the narrow side. After making the first turn, lightly press the sides of the dough and then wrap further. Then put the wrapped bagels on a greased baking sheet and place in the oven for 20-30 minutes to bake at 180 ° C. Sprinkle the finished baked goods with icing sugar.
