Recipes for pickled tomatoes, pickled cucumbers are in the culinary arsenal of every housewife. But not every woman can boast of the ability to cook pickles in Korean. Spicy tomatoes will decorate any feast and will please even the most spoiled guest.
Korean Tomatoes
Spicy tomatoes are a delicious, savory snack. It is quick and easy to prepare using a traditional Korean recipe. Vegetables are obtained saturated with the aroma of herbs and spices.
The first tomatoes you come across will not work for this winter snack. They should be strong, and overripe fruits will not keep their shape, they will quickly turn sour in a spicy marinade.
Ingredients for winter harvesting:
- 2 kg of medium sized tomatoes;
- 2 large bell peppers;
- 2 large heads of garlic;
- 100 g granulated sugar;
- 2 tbsp. l. salt with a slide (stone, iodized will not work);
- 100 ml of vinegar 9%;
- 100 ml of refined sunflower oil;
- a bunch of dill;
- a bunch of parsley (you can replace it with basil).
- chili peppers - to taste, but not more than one pod.
Instructions for making a Korean snack:
- Wash the tomatoes. Leave them to soak in cold water for 1 hour.
- Wash the bell pepper. Remove stalk and seeds.
- Peel the garlic, wash it.
- Rinse the herbs and pat dry with a paper towel.
- Grind the bell pepper with garlic in a blender, or mince the vegetables.
- Add sunflower oil, granulated sugar, table vinegar to the vegetable mixture. Mix everything thoroughly.
- Add bitter pepper. In this case, it is better to focus on your taste. The whole pod will make the appetizer very spicy. For those who do not like excessive spice, it is better to use a quarter of the chili fruit.
- Salt the filling, mix thoroughly.
- Remove thick stems from greens. Grind it up. Add to the spicy fill. Mix everything thoroughly.
- Sterilize jars and lids.
- Cut the tomatoes into 4 equal pieces. Place the first layer of fruit in the prepared jar. Lay on top with fill.
- Spread out a new layer of tomatoes. Cover it with herb marinade. And so each layer, until the vegetables run out. If excess fill remains, you can add it from above - along the neck of the jar.
- Roll up the jar. Place upside down. No need to insulate. It is recommended to turn it over from time to time so that the fruits are better marinated. Tomatoes will juice quickly and be completely covered in them.
The appetizer will be ready in a day. It keeps well at room temperature for about four months. To extend this period, you need to keep the tomatoes in the refrigerator.
This option for harvesting tomatoes for the winter is also great for green fruits. However, it is worth considering that such vegetables will be pickled much longer - three days. The reason is the density of their rind and the pulp itself.
