When following a gluten-free diet, it is not always forbidden to eat animal meat and poultry. Delicious oriental pies - samsa - are prepared not only from puff pastry, but also from unleavened dough. These pies, made from gluten-free dough, are perfect for those who have to or according to preferences follows the BGBQ diet.

It is necessary
- - corn flour - 1, 5 cups;
- - zucchini - 100 g;
- - garlic - 1 slice;
- - salt - 0.5 tsp;
- - water - 2 tablespoons;
- - sunflower oil - 50 ml;
- - turkey meat (fillet) - 250 g;
- - onions - 250 g;
- - salt, cumin, ground black pepper, nigella - to taste
Instructions
Step 1
First of all, you should prepare the filling. To do this, take a turkey fillet: a drumstick is preferable, since the filling from the brisket will turn out to be less juicy. Cut the meat into large cubes.

Step 2
Add the diced peeled onions. Season with ground cumin, ground black pepper and salt to taste. If desired, add a chopped clove of garlic to taste.
Step 3
Pour the cornmeal into a wide bowl, which will be convenient for kneading the dough. For a glass, a container with a volume of 240 grams is taken. A cup and a half of cornmeal equals approximately 180 grams.
Step 4
Add salt to the cornmeal and stir. Add raw zucchini, mashed and mashed. The fruit can be grated on the finest grater or mashed with a blender. Together with the zucchini, rub a clove of garlic.

Step 5
Pour sunflower oil into this mixture and grind into crumbs, which collect well in a lump. Now pour in very hot water and stir the ingredients quickly for a very tender corn dough.
Step 6
Divide the dough into four equal portions. Roll each one out using a plastic bag or cling film. Parchment is also suitable for rolling out dough, but parchment will not mold the product, so this material is not recommended in this case.

Step 7
Place the ball of dough between sheets of plastic or cling film and gently roll it out with a regular rolling pin. You need to roll it out quite thinly, about 2 mm. The dough is gluten-free or, otherwise, gluten-free, fragile, not elastic, it will not work to roll it out in the usual way.

Step 8
Without removing the cake from the bag, put a tablespoon with a slide of the filling and, using the film on which the dough was rolled out, blind the edges, getting a ball. Transfer the pie to a baking sheet lined with parchment. All these actions must be performed as carefully as possible, since the dough, which does not contain gluten, is completely inelastic, and tears easily.

Step 9
Sprinkle the top with nigella seeds, pressing them a little into the dough so that they do not crumble.
Nigella, or, as it is also called, nigella, is the seeds of a beautiful annual garden plant with a colorful oriental scent. It is not necessary to sprinkle the samsa with nigella, but it is worth a try, since in combination with the aroma of cumin, this gives an unsurpassed result.

Step 10
Preheat oven to 200 degrees Celsius. Place a baking sheet with samsa on the middle tier of the oven and bake the pies for 30-40 minutes. It is important that the meat is baked well.
