Diet salad with beans is healthy and nutritious for the body: beans and bell peppers are rich in protein. Salad vegetables are fried. But do not be afraid of this, vegetable oils are useful for the body, if they are not overheated, and change when frying each type of vegetables.
This bean salad recipe is a Greek dish. To prepare 500 g of salad, you will need the following products:
- red beans - 100 g;
- carrots - 100 g;
- onions - 100 g;
- tomatoes - 100 g;
- sweet pepper - 100 g;
- garlic - 16 g;
- vinegar essence - 1.5 g;
- parsley greens - 30 g;
- vegetable oil - 50 g;
- water - 100 g.
Bean salad preparation technology
Pour red beans with water and leave for 4-5 hours. Then rinse it thoroughly and boil until tender. Wash and peel the carrots, chop into thin strips. Scales should be removed from onions, cut into thin half rings. Wash the tomatoes, remove the peel with hot and cold water and mince. They can also be cut into thin slices. Wash the sweet pepper and remove the seed nest from it, cut into strips.
All vegetables, individually, should be fried until light golden brown. The beans can also be fried if desired. Then all prepared foods must be combined together, covered with water and simmer for 10 minutes over medium heat.
Rinse the parsley and chop finely. Peel the garlic and chop very finely. Add all this to the stewed vegetables, season with vinegar and boil for 3-5 minutes. All the water should evaporate, when this happens, the salad can be considered ready.
