Potatoes with mushrooms in sour cream

Preparing the dish is easy, and the most difficult thing in the recipe is, perhaps, peeling the potatoes. Do not underestimate the dish, it only seems at first glance that there is no "zest" in it. In fact, the food turns out to be so tasty and tender that it can even be served on a festive table as the main side dish for meat.

Ingredients:

  • 500 grams of fresh porcini mushrooms;
  • one kilogram of potatoes;
  • two eggs;
  • one onion head;
  • 400-500 ml sour cream (two glasses);
  • 150 grams of vegetable oil;
  • salt and pepper to taste;
  • 50 grams of hard cheese.

Step-by-step cooking recipe:

Chop the mushrooms and onion and fry in a pan until golden brown (in the first minutes, moisture from the vegetable and mushrooms will evaporate, only after 20 minutes the ingredients will begin to fry).

Mix eggs with sour cream in a bowl, salt and pepper the composition, then pour it into a pan with mushrooms, close the lid and simmer over low heat for five minutes.

Peel the potatoes, rinse them, cut into large slices and fry in hot oil until half cooked.

Put the potatoes in a baking sheet in one layer. Pour the stewed mushrooms in sour cream over the vegetables. Sprinkle with grated cheese on top.

Place the baking sheet in an oven preheated to 180 degrees for 30-40 minutes.

Important: if you sprinkle the potatoes with mushrooms with cheese at the very beginning of baking, then the dish will have a crispy brown cheese crust on top. Therefore, if you need to get the dish just with melted viscous cheese, then in this case you need to sprinkle the potatoes with cheese five minutes before the meal is ready.

It goes well with high-carbohydrate side dishes such as pasta, all kinds of cereals, and mashed potatoes. It is quite possible to use the dish as a main dish in combination with salads of greens and juicy vegetables (tomatoes, peppers, cucumbers, onions and others).

Ingredients:

  • 500 grams of chicken liver;
  • 500 grams of mushrooms (honey mushrooms, chanterelles and even champignons, oyster mushrooms are suitable);
  • two large onions;
  • ½ cup sour cream;
  • two or three cloves of garlic;
  • two tablespoons of ordinary flour;
  • 50 ml of oil;
  • salt, pepper - to taste.

Step-by-step cooking recipe:

Rinse the chicken liver, cut off the films from offal. Put the frying pan on fire, pour oil into it, heat and fry the liver until cooked.

Transfer the cooked liver to a free dish, and put the onion and chopped mushrooms in the pan in which this offal was cooked. Fry them until golden brown over high heat.

Put the liver to the onion with mushrooms, add salt, spices, mix and fry these ingredients together for five minutes.

In a bowl, combine the sour cream with flour and pour the mixture into the skillet with the liver and mushrooms. Simmer the dish under a closed lid for five to seven minutes (until the food thickens).

It is also worth noting that meatballs can be made both low-calorie (dietary) and high-calorie, you just have to take suitable minced meat for cooking.

Ingredients:

  • a kilogram of minced meat;
  • one egg;
  • 100 grams of white bread;
  • 150 grams of dry mushrooms;
  • two onions;
  • a glass of sour cream or heavy cream;
  • 100 grams of flour;
  • ½ glass of broth;
  • 100 ml of oil;
  • salt, pepper, seasoning - to taste.

Step-by-step cooking recipe:

Soak dried mushrooms in water for 12 hours. After the specified time, pass the mushrooms through a meat grinder. If there are no dry mushrooms, you can use fresh or frozen, but in this case, the product should be taken two or three times more, respectively.

Chop one onion. Place the minced meat in a deep dish, add the egg, chopped onion, mushrooms, salt, seasonings, bread to it and mix everything thoroughly. Mix first with a fork, then with your hands.

Form small balls of minced meat, roll them in flour and fry in a pan with the addition of vegetable oil.

In a bowl, mix the broth (beef, chicken, and even vegetable) and sour cream, salt. Pour the meatballs in the pan with the resulting mass and simmer the dish for 10 minutes.

Pasta goes well with meat and seafood, but they are no worse in harmony with mushrooms. Not all mushrooms are suitable for the preparation of this dish, but only champignons, honey mushrooms and chanterelles. If these mushrooms are not available, others can be taken as a basis, but not tubular.

Ingredients:

  • 200 grams of pasta;
  • 400 grams of fresh mushrooms;
  • onion head;
  • two or three cloves of garlic;
  • a pinch of dry greens (or a little fresh);
  • salt and pepper to taste;
  • 200 ms 15% cream;
  • vegetable oil (for frying food).

Boil the pasta until half cooked, discard them in a colander and let the water drain.

Put the pasta in a pan with the mushrooms, stir and simmer for about five minutes over low heat. Serve the dish right away, if you don't, the pasta in the sauce will soften and turn into porridge. It is not recommended to heat the dish, so you should not cook it for future use.
